This simple black bean soup with a pumpkin swirl dish makes a filling, veggie-filled meal. Its black and orange hues make it ideal for a Halloween or fall feast.
Ingredients
- 1 1/2 pounds butternut squash (from about half of 1 large squash), peeled and cut into 1-inch pieces
- 3 cups low-sodium vegetable broth
- 1/2 cup heavy cream
- Roasted, salted pepitas, for serving
- Crème fraîche or full-fat plain yogurt, for serving
- Finely chopped chives, for serving
- 2 medium carrots, cut into 1 1/2-inch pieces
- 1 orange bell pepper, stemmed, seeded and cut into 1-inch-thick slices
- 1/4 teaspoon dried thyme
- Kosher salt and freshly ground black pepper
- 1/2 medium onion, cut into 4 wedges
- 3 tablespoons olive oil
- 3/4 teaspoon granulated garlic
- 1/2 teaspoon ground ginger
Instructions
- Pour two cans of black beans into a large food processor.
- Combine the salsa, cumin, dried oregano, salt, pepper, and vegetable broth in a mixing bowl. Blend till smooth, or leave a few chunks.
- Spray four ramekins with cooking spray. Distribute the Soup evenly among the prepared ramekins.
- Wrap the ramekins with foil securely. I like to tuck the edges of the foil beneath the ramekins.
- Preheat the air fryer for 5 minutes at 375°F (190°C). Place two ramekins on the lowest rack with care (the one in the middle of the air fryer oven).
- The Soup may need to be cooked in two batches.
- Cook the Soup in an air fryer for 20 minutes at 375°F (190°C).
- Stir the Soup when it has finished cooking. The Soup surrounding the ramekins will likely be hotter than the Soup in the center.
- Be careful when taking the Soup from the air fryer and serving since the ramekins are HOT. While the soup air fries, you may prepare the soup topping
- If the canned Soup is condensed, add water. Spray the ramekins with cooking spray, then fill them with the Soup (don’t overfill!) and cover with foil. As previously mentioned, air fried the Soup for 10 minutes, then every 5 minutes until done.
