Asparagus Pizza Recipe

Pizza doesn’t need to be a hefty dinner if we leave out the meat and sauce and add fresh veggies.

This pizza recipe features beautiful spring asparagus. It can be the show’s star when used as a pizza topping!

Asparagus pizza is a vegetarian meal from a golden-brown, crispy pizza crust topped with olive oil, Italian cheeses, and thin, long spears of bright green asparagus.

Asparagus, native to Europe and parts of South Asia, has a robust taste with nutty and earthy overtones. Once the dough is prepared, you can have this quick evening asparagus pizza dish on the table in less than a half-hour. 

Please make the most of the earthy vegetable by combining it with a creamy ricotta cheese foundation that lets the asparagus’s robust flavor shine.

Asparagus Pizza Recipe Ingredients

  • 1 (10- to 12-ounce) ball of pizza dough, homemade or store-bought
  • 8 fresh asparagus spears, peeled and sliced
  • 2 tablespoons Parmesan cheese, freshly grated
  • 1 cup baby arugula
  • 1 pinch of crushed red pepper flakes
  • 1 tbsp olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded, part-skim, or whole milk

How To Make Vegetarian Asparagus Pizza

Step 1

Place the oven rack in the middle of the oven. Place the pizza stone on the rack if using. Preheat the oven to 475°F. 

(If using a pizza stone, pre-heat it for 30 minutes.)

Step 2

Flour your work area lightly and roll or shape the dough into a 14-inch circle with your hands. Place a big parchment paper on top of a pizza peel, cutting board, sheet of parchment paper, or baking sheet. 

Spread pesto evenly over the dough, leaving a 1-inch border around the edges. Sprinkle with mozzarella or an Italian cheese mix. Asparagus and prosciutto (if used) should be cut into bits and scattered on top.

Step 3

Slide the pizza onto the oven rack or stone and bake for 10 minutes, or until the edges are brown and the cheese is melted. 

Remove the pizza from the oven and cut it into pieces if using.

How to make Shaved Asparagus Pizza

  • Shave the asparagus to the appropriate thickness before making the pizza. 
  • Toss with lemon zest, lemon juice, red pepper flakes, olive oil, garlic, black pepper, tofu, mixed herbs, and kosher salt.
  • Spread the Cheesy Kale Sauce on the pizza crust.
  • Arrange the shaved asparagus in a straight line over the Cheesy Kale Sauce.
  • Bake for 30-40 minutes, or until well done.
