Memories of my mother’s handmade bread cooked using a live yeast starter. Tender, buttery yeast rolls as delicate as clouds. As a newlywed, I remember awkwardly learning to bake pizza from scratch.

We tend to link dough with high-calorie meals. On the other hand, today’s Grilled Greek Pizza is lean and mean, with fresh raw vegetables and only a sprinkle of feta cheese.

I adore grilled pizza in any form, but Grilled Greek Pizza is at the top of my list this summer. I’m going Greek each time I get, with creamy hummus, arugula, fresh garden tomatoes, salty olives, feta, and nice olive oil.

  • 3tablespoons olive or vegetable oil
  • 1/8teaspoon salt
  • 1cup shredded mozzarella cheese (4 oz)
  • 1/2cup crumbled feta cheese (2 oz)
  • 10kalamata olives, cut in half, pitted
  • 2medium tomatoes, seeded, coarsely chopped (1 1/2 cups)
  • 1/3package (48-oz size) of frozen pizza dough & Italian bread (1 loaf), thawed
  • 6drops red pepper sauce
  • 1clove garlic, finely chopped
  • 2tablespoons chopped fresh, or 2 teaspoons dried basil leaves
  • 3green onions, sliced (3 tablespoons)

How to Cook Grilled Greek Pizza

The dough is the cornerstone of every good grilled pizza. I prepare a basic dough with only six ingredients: yeast, water, sugar, bread flour, olive oil, and sea salt. The most critical aspect of preparing great pizza dough is to utilize high-quality ingredients. Check that your yeast hasn’t been hanging about for too long, and use the best olive oil and sea salt.

Although handmade pizza dough is delicious, you can buy pizza dough at your grocery store’s freezer department or even in the deli section if you’re in a hurry. Grill the pizza dough on hot grilling stones before topping it with hummus and fresh vegetables.

Drizzle olive oil over the top of the Grilled Greek Pizza to bring out the flavors. If you don’t have a grilling stone, you may use a baking stone instead or place the pizza dough directly on the grill grates.

It’s a little more difficult to flip over when you’re on the grates. This quick Grilled Greek Pizza is full of fresh ingredients and cooks in minutes. It’s a fantastic midweek supper that can also be served on the weekend.

  • Combine oil, salt, pepper sauce, and garlic in a small bowl; reserve 1 tablespoon. Add basil, onions, and tomatoes; toss. Cover; let stand for 30 minutes at room temperature.

  • Cook over medium heat, covered, for one to two minutes or until the bottoms of the crusts begin to brown. Divide the dough in half, then rolls each half into 8-inch rounds. Place dough rounds on the grill and cook until they start to brown.

  • Brush the reserved oil mixture evenly over the crusts. Top with the tomato mixture, cheeses, and olives. Remove crusts from grill; place browned side up on cookie sheet.

  • Pizzas are ready when you slide them off the cookie sheet onto the grill. Cover the grill; cook for 2 to 4 minutes or until the bottoms of crusts are browned and the cheese is melted. (Place foil between crusts and the grill if crusts brown too quickly.)
