  1. Cauliflower — 1 small to medium-sized head of cauliflower should give 2 to 3 cups after processed (I’ve discussed the various varieties in-depth below).
  2. Egg – 1 beaten egg
  3. Cheese – You may use a variety of cheeses, but the basic guideline is:
    1. a half-cup of shredded cheese (mozzarella, parmesan, etc.)
    2. 1/3 cup soft cheese (goat cheese, etc.)
  4. To taste, season with salt and black pepper.
  5. Italian Seasoning – 1 teaspoon Italian seasoning, but feel free to add more spices if desired.

Types Of Cauliflower To Use

When it comes to preparing cauliflower rice, you have various possibilities. You may prepare it from fresh or frozen cauliflower florets, or you can buy it pre-riced. However, if you’re wondering which sort of cauliflower to use, here’s your answer. After evaluating all three types, the uniformity was nearly same.

I understand that pre-riced may not be accessible to everyone. So, when deciding from fresh cauliflower and frozen florets, the frozen florets demanded the least amount of effort (no cutting mess or cooking needed). As a result, it rapidly became my preferred way.



  • 1 1/2 lb frozen cauliflower florets
  • Thaw frozen cauliflower overnight in the fridge.
  • Grate the florets using a food processor attachment or a box grater.
  • Using a nut milk bag, squeeze the cauliflower to remove any excess moisture.


  • 5 cups pre-riced cauliflower
  • 5 minutes in the microwave softens cauliflower rice.
  • Using a nut milk bag, squeeze it to remove any liquid.


  • 1 big cauliflower head (approximately 2 pounds, yielding 1 1/2 pounds of florets)
  • Remove the florets and chop them into even-sized pieces.
  • Grate the florets using a food processor attachment or a box grater.
  • Soften rice in the microwave for 4-5 minutes.
  • Squeeze the cauliflower rice to remove any excess moisture using a nut milk bag.

How to make homemade cauliflower pizza crust

It takes a few steps to make this gluten free cauliflower pizza crust, but it is well worth the effort, and you will be pleased you did!

  • Preheat the oven to 400 degrees F.
  • To prepare the rice, use a box grater or food processor to shred the cauliflower florets.
  • Microwave the cauliflower in a microwave safe bowl until it is cooked, then pulse it in a food processor to make tiny pieces. If you miss steaming and squeezing the extra moisture out of the cauliflower rice, the crust will be mushy and unable to hold the slices in your palm. (Note: If using frozen cauliflower rice, microwave it to warm before proceeding.)
  • The cauliflower should be drained. Fill a nut milk bag or a kitchen towel halfway with shredded florets. Crush it until all of the liquid has been extracted. Allow the cauliflower to cool somewhat before squeezing to avoid burning your hands!
  • Combine the cooked cauliflower rice, egg, cheese, garlic powder, and spices in a mixing bowl. Toss everything in a large mixing basin with your hands until well incorporated.
  • Mix it with the remaining crust ingredients, then shape and mould it into a pizza crust.
  • Press the dough into an even circle on a baking sheet with parchment paper. A pizza stone is much better and will result in a crispier crust.
  • 25 minutes in the oven If you used frozen cauliflower rice, it may need to simmer for a few minutes longer. Then take it out of the oven.
  • Place the toppings on top. Then return the pizza to the oven for another 10 minutes.

Pro Tip: To obtain the crispiest cauliflower crust available, bake it on a pizza stone rather than a baking sheet.

Cauliflower Pizza Toppings

Now comes the exciting part: my favorite toppings! One thing to keep in mind is that a chunkier is preferable. You don’t want your ingredients to be excessively greasy or runny, as this will make your crust soggy even more.

In terms of flavor, the possibilities are limitless. However, I’ve chosen to make two of my favorite dishes: pesto chicken and Margherita pizza. The entire recipes are available below, but here’s a brief synopsis of everything you’ll need.

  1. BBQ Chicken — BBQ sauce (I use sugar-free bbq sauce), shredded chicken, sliced red onions, and cheddar cheese
  2. Sausages – Tomato sauce, shredded mozzarella cheese, pepperoni, Italian sausage, crumbled ground beef, and sliced Canadian bacon make up the Meat Lover’s pizza.
  3. Bacon – Tomato sauce, shredded mozzarella, Canadian bacon, and sliced pineapple make up the Hawaiian pizza (omit for keto, but ok in small amounts for low carb).
  4. Pesto – Top with fresh mozzarella and sliced tomatoes and spread with prepared pesto sauce. After baking, garnish with fresh basil. Alternatively, you can also use these toppings: pesto sauce, sautéed spinach, shredded chicken, mozzarella cheese, and garlic cloves.
  5. Margherita – Tomato sauce, fresh mozzarella cut, tomatoes sliced, and basil fresh. (You may also add fresh basil after baking if you like.)
  6. Taco Pizza — Top your low-carb cauliflower pizza dough with salsa, taco-seasoned ground beef, and Mexican cheese mix, then bake. Top with shredded lettuce, chopped tomato, jalapenos, and sour cream after removing from the oven.
