I wish I had the words to convey how fantastic this pizza is!!
The crust is light and fluffy, and the garlic and tarragon complement the fresh lobster flesh nicely. Then there’s the melted cheese mixture, which brings everything together. I didn’t believe anything could beat my Shrimp Scampi Pizza, but this one does.
Lobster on pizza
When I saw a Lobster Flatbread Pizza on a restaurant’s menu, I had to get it. I had no clue what to expect, but it was delicious. I eventually tried to recreate it at home, and now you can too. It’s a great way to add marine flavor to your pizza. This meal might be an appetizer or a full course. It takes longer to prepare than a regular pizza, but it’s worth it for the lobster.
Ingredients
- Lemon, cut into wedges, for serving.
- 2 tablespoons olive oil
- 3 tablespoons freshly grated Parmesan cheese
- 1 tablespoon fresh thyme leaves
- 1 1/2 cups lobster tail, well-drained and patted dry
- 1/2 teaspoon red pepper flakes
- 1 cup freshly grated fontina cheese
- 1 cup shredded mozzarella cheese
- 1 ball of pizza dough, homemade or store-bought
- 2 cloves garlic minced
How to Make It
Put the dough in a bowl and let it come to room temperature. Allow the dough to rest for one hour, covered.
If using a pizza stone, preheat the oven to 450°F.
Punch down the dough. Hand-stretch the dough into a circle. If using a pizza stone or a pizza pan, place the pizza on a well-floured pizza peel.
Olive oil and minced garlic should be combined in a small bowl. Apply the garlic-olive oil mixture to the dough with a spoon or brush.
Combine cheeses in a medium bowl. Scatter half of them evenly over the dough. The lobster should be arranged evenly over the cheeses, with red pepper and thyme sprinkled on top. The remaining cheeses should be sprinkled on top.
The crust and top of the pizza should be golden brown after 20-25 minutes of baking. Let sit for a few minutes and serve with lemon wedges.
Vegetables would be a great addition to this pizza. Artichoke hearts, mushrooms, or asparagus would be great choices.
Have fun combining them! If you want something really rich and tasty, you could also use cream instead of the garlic-olive oil sauce.
A grill would also be a great way to prepare this pizza. You could even grill the lobster a little beforehand.
