Texas people must eat TexMex meals. How delicious the enchiladas are is frequently how I evaluate a new Mexican restaurant. Enchiladas with queso con queso, or cheese enchiladas, are one of my favorite foods.
This delicious Easy Enchilada Bowl is my quick and simple microwaveable rendition.
This is unquestionably a quick fix. In less than five minutes, you can prepare it, cook it, and then enjoy it while watching Netflix.
When you have a TexMex desire, it is satisfying. It also works well in the winter months when you want something warming and filling.
Ingredients
- 3 corn tortillas
- 1/2 cup shredded cheddar
- salsa
- 1 10.5 oz can of chili with no beans
Make an Easy Enchilada Bowl
Creating an enchilada bowl is similar to making lasagna since both dishes use cheese, meat sauce, and corn tortillas instead of noodles.
Using flour tortillas is not something I would advise. I’ve seen non-TexMex culinary experts utilize wheat tortillas for enchiladas, but that’s not a smart idea. They become a huge slimy mess. Making enchiladas is significantly easier when using corn tortillas.
I like to add a coating of chili at the beginning. Alternatively, you might add a thin salsa layer first. There is only a thin coating at first to prevent the tortilla from sticking to the bottom of the dish.
Stack the following components next: tortilla, chili, cheese, and salsa.
You may make this more like a Mexican lasagna if you have extra ingredients. The layers of fajita meat, black beans, and rice also work well.
Your cooking time might vary significantly in a microwave. I began off using my 1500-watt microwave for one minute. I then inserted my finger into the middle of the meal to feel for warmth.
I ran it for a few more minutes because it turned out to be a little too chilly, and it was wonderful. The interior was heated and the cheese was melting.
I added some chives and a spoonful of sour cream last. My adolescent enjoys the freeze-dried chives I keep in a spice jar. It would also be delicious to top with guacamole! However, you are not need to top it with anything because it is delicious on its own.
My spouse now favors this as his go-to fast lunch at home. He tried this dish and fell in love. He now makes it on the weekends when he has to prepare himself a dinner.
