Thanksgiving Egg Rolls in a Air Fryer

Air Fryer Egg Rolls with Turkey & Stuffing is the ideal way to use up Thanksgiving leftovers, but they also make a quick and exciting midweek supper.

Making egg rolls in the air fryer is a fantastic idea. For years, I was anti-frying. I didn’t allow it in my house since it makes a mess and is unhealthy, but now that I have an air fryer, my horizons have expanded, and I can prepare things I wouldn’t usually make. 

Thanksgiving egg rolls are delicious and far from dull. Use leftover stuffing and turkey from Thanksgiving to create these egg rolls, or prepare them for supper during the week because they are so simple.

Equipment

  • Air Fryer
  • Tongs
  • Pastry Brush

Ingredients For the egg rolls

  • 1 cup chicken stock
  • 3 cups stuffing (1 box) prepared
  • 1 pound turkey breast cooked & cubed
  • 1 large egg
  • 1 Tablespoon water
  • 12 egg roll wrappers
  • Chop 1 tablespoon of fresh thyme
  • Chop 1 tablespoon of fresh rosemary
  • Chopped sage, 1 tablespoon

Ingredients For the gravy

  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh parsley chopped
  • 3 tablespoons butter
  • ¼ cup diced onion
  • 3 tablespoons flour
  • 1 teaspoon black pepper
  • 1 cup chicken stock
  • ½ tsp salt to taste

Ingredients For the cranberry dipping sauce

  • ¼ cup orange juice
  • 2 cups frozen cranberries
  • 1 cup frozen strawberries
  • ½ cup 

How to cook Thanksgiving egg rolls in the air fryer

To make the egg rolls

  • Bring the chicken stock to a moderate simmer in a medium sauce pan. Take the pan off the heat and add the prepared stuffing, fresh herbs, and cubed turkey.
  • To prepare the egg wash, whisk together the egg and water in a small bowl.
  • Make a diamond shape with one egg roll wrapper. Brush the egg wash along the wrapper’s edges.

  • Scoop 2 tablespoons of the filling mixture onto the egg roll wrapper and roll up.
  • Tuck and roll the bottom of the wrapper up first, then the left side, then the right. While rolling the remainder, place the seam side down on a platter.
Cook for 6 minutes at 390°F
  • Spray the basket of your air fryer with nonstick spray (I use olive oil) and place 4-5 egg rolls, seam side down, in the basket. Lightly spray the egg rolls with nonstick spray.

  • Cook for 6 minutes at 390°F, then turn with tongs, gently spray again, and cook for another 4 minutes or until crisp and golden.
  • Remove and enjoy!

To make the cranberry dipping sauce

  • Add the cranberries, strawberries, sugar, and orange juice to a medium saucepan over low heat. Bring to a boil and cook for 6-8 minutes, or until the cranberries explode.
  • Simmer for another 4-5 minutes, stirring occasionally. Remove from the heat and mash the mixture until smooth.
  • Transfer to a small dipping dish.

To make the gravy

  • Melt the butter in a medium saucepan over medium high heat. Then, add the chopped onion and cook until it is transparent. Reduce the heat to low and mix in the flour and pepper to make a roux.
  • Combine the herbs, chicken stock, and salt in a mixing bowl. Cook, stirring periodically, over low heat until the gravy thickens.
  • Transfer to a small dipping dish.

How long to cook egg rolls in air fryer

7–10 minutes Air fry the egg rolls at 360 degrees Fahrenheit for 7-10 minutes, or until thoroughly cooked and golden brown.

If you’re creating turkey and stuffing egg rolls, cook them in the air fryer for 10 minutes at 390 degrees, turning after 6 minutes.

What side dishes go with egg rolls?

Chow mein, crab rangoon, and General Tso’s chicken are excellent side dishes with egg rolls. With egg rolls, you may also serve egg drop soup, guacamole, and loaded potato skins.

Serve egg rolls with a cucumber salad or some bok choy for a nutritious side dish. My turkey and stuffing egg rolls were dipped in gravy and cranberry sauce.

How do you keep egg rolls crispy?

Cool on a wire rack – Using a rack instead of paper towels will keep the outside crispy all around.
